With Chef Paul at the helm, The Golden Peacock became the first Indian restaurant to be awarded a Michelin Star in Asia. In a career spanning 20 years, Chef Paul has worked at some of the most superlative restaurants in Asia, including Veda, the Hyatt Regency, Jashan Fine Dining Restaurant, all in Hong Kong, and at The Marriott Resort and The Leela Palace in Goa.
Born in the Southern Indian state of Kerala, Chef Paul is based in Macau. Under the tutelage of his late father, he developed an innate appreciation for the culinary dexterity and the rich flavours and traditions of Indian cuisine from a young age. Always eager to experiment, he pushes boundaries and combines traditional Indian recipes with global techniques to create awe-inspiring dishes.
